TONOW Distillery

TONOW Distillery started in 2021. It is an exciting process where, with the help of the Aromat distillery from the Müller brennereianlagen, we get the aroma and good taste from our fruit into our spirits.

MÜLLER AROMAT ® distillery

The distillery is the result of 3 generations of production and development of distillation facilities in Swartzwald in southern Germany. The Aromat® part helps to capture the good aroma from our fantastic fruit.

All spirits are made from fruit from our orchard, so we can capture the unique taste and differences.

Distillation in full swing

Throughout the winter, the distillery runs with wine from this year's harvest. The picture is a look into the column where the alcohol vapors are on their way up through the system.

TONOW Distillery received 9 medals in 2023 and here in 2024 we have also received 9 medals, one of which is an outstanding gold medal.

In September, we also received TROPHY 2024. 23 products have received this distinction out of more than 4000 products. We are really proud of that.

Maturation - Aging in casks

Barrel storage has started. Here comes nice barrel-aged apple brandy when we thought it was ready. We store it in pure varieties so that we can highlight the differences in the apples.

The first barrels of Eau de Vie and apple cider are also maturing. It becomes our own Pommeau No.18. Rejoice it is good.

Before Eau de Vien is bottled, it is diluted from the 83% it is typically when it is distilled. Here, the water used is of great importance. We are so lucky that the large pocket of water that the plantation and distillery sits on top of is perfect for just that.

We take good care of our water, it is one of the most valuable things we have.
